National Cookie Day

Today is National Cookie Day.

Below is my favorite chocolate chip cookie recipe. I made a couple dozen to give to friends and family today.  I hope you enjoy it.

Chocolate Chip Cookie Recipe

Serves 26 cookies

2 ¼ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt (you can leave this out and the cookies will come out fine)

1 cup melted margarine (2 sticks)

1 cup granulated sugar

½ cup firmly packed brown sugar

2 eggs, beaten slightly

2 teaspoons vanilla extract

2 cups semisweet chocolate morsels (I won’t tell if you put extraJ)

 

Preheat oven to 375 degrees F. Combine flour, baking soda, and salt in a medium bowl, set aside.

Beat margarine, granulated sugar and brown sugar by hand in a large bowl until combined. Add eggs, and vanilla, beat until well blended. Add flour mixture, mix until well combined. Stir in chocolate morsels.

Drop cookie dough by rounded tablespoon onto ungreased cookie sheet about 1 ½ inches apart.

Bake 12 to 14 minutes or until edges are crisp but centers are still soft. Let stand 2 minutes on cookie sheet before removing and cooling completely on a wire rack.
